When selecting your cacao butter, keep in mind that it is less processed than cocoa butter, retaining more of the natural nutrients and antioxidants from the cacao beans.



This minimal processing not only provides additional health benefits but also results in a richer, more intense chocolate flavour.



However, if you are unable to find cacao butter, cocoa butter can be used as a substitute. While slightly more processed, cocoa butter still offers a creamy texture and pleasant flavour, ensuring your homemade white chocolate bars remain delicious and satisfying.

For those who avoid all dairy, coconut milk powder is an excellent alternative, lending a subtle coconut flavour and maintaining a smooth consistency.



Nut or seed butters, such as almond or pumpkin seed butter, can also be used for a creamy and flavourful addition, though they result in a softer fudge-like product that melts more easily.




Sweetening your homemade white chocolate bars is another area where you can tailor the recipe to suit your needs. Traditional powdered sugar is a classic choice that ensures a familiar sweet taste. If you're looking for a non-sugar option, a powdered monk fruit and erythritol combination offers a great alternative without the glycemic impact.



For a naturally creamy and soft chocolate, honey can be used, adding a unique depth of flavour.



To shape your chocolate, you can pour the mixture into silicone molds for uniform bars or into a baking pan for a more rustic look. This flexibility allows for creativity in presentation and additional ingredients.



For instance, you can create a salted hazelnut bark by pouring the chocolate mixture over a cup of roasted hazelnuts and sprinkling coarse or flaked salt on top before letting it set in the fridge. That combination is a favorite here at Histamine Haven.



For a pop of colour and extra health benefits, try adding turmeric powder or low- histamine freeze-dried fruit powders like dragon fruit.

Step 1: Cacao butter


Start by melting 100 grams (3 1⁄2 ounces or 1⁄2 cup) of cacao butter in a saucepan over low heat.


Step 2: Base ingredient


Add one of the following:

- 1⁄4 cup (25 grams) of sifted goat milk powder, choose a brand that is antibiotic and hormone free or

- 1⁄4 cup (25 grams) of sifted coconut milk powder or

- 1⁄4 cup (50-60 grams) of pumpkin seed butter, macadamia nut butter, hazelnut butter or other nut or seed butter you tolerate well (the weight varies depending on the butter used)


Step 3: Sweetener


Add one of the following: - 1⁄4 cup (25 grams) of sifted powdered sugar or

- 1⁄4 cup (25 grams) of sifted powdered monk fruit and erythritol or

- 1⁄4 cup (85 grams) honey, choose a light-coloured honey to keep your chocolate white


Step 4: Add Ons (optional)


Bring on your creativity! Add your favourite low histamine nuts or seeds, freeze-dried fruit powders, turmeric powder, cardamom powder, a drop or two of an essential oil or other ingredients that you tolerate and that spark joy for your taste buds.


Step 5: Pour & Cool


Pour your chocolate into molds or line a bread pan or 8x8 pan with parchment paper and pour the mixture in. A bread pan will give you a thick bark, while an 8x8 works better if you are adding additional nuts or seeds.


Set the chocolate into the fridge to cool. Once cool, remove and store in a sealed container in the fridge.
